For most food applications, monohydrate is the standard choice. For pharmaceutical injectable formulations and industrial fermentation where water content needs to be precisely controlled, anhydrous is specified. Lower DE values (3 to 10) produce a longer chain polysaccharide with better film-forming properties, lower sweetness, and better encapsulation performance.
